Esta tendencia no solo responde a una creciente conciencia ambiental, sino tambi\u00e9n al inter\u00e9s por ofrecer platillos m\u00e1s frescos y de mejor calidad a los comensales.<\/p>\n\n\n\n<p>Chefs y propietarios se\u00f1alan que trabajar con productores locales permite reducir costos de transporte, apoyar a peque\u00f1os agricultores y disminuir la huella de carbono. Adem\u00e1s, los clientes perciben una mejora notable en el sabor y la autenticidad de los platillos, lo que fortalece la identidad gastron\u00f3mica de cada regi\u00f3n.<\/p>\n\n\n\n<p>Esta iniciativa tambi\u00e9n ha impulsado la creaci\u00f3n de men\u00fas rotativos, que cambian seg\u00fan la disponibilidad de los ingredientes.
